Asian Coffee Coconut Energy Balls. These vegan tasty bites will give you the focus and energy to power through the day. They don't require any baking!
This coconut coffee energy balls recipe only calls for 20 minutes of your time and a food processor! And it all depends on how fast you can roll those little balls! The coconut flakes are optional but I love them for that extra texture and nutrition.

So what makes these coconut coffee power balls Asian-tasting? The secret is in the Sweet Coconut Condensed Milk. Condensed milk is commonly used in Asian desserts! It's used as a syrup or sometimes inside the dessert. And it tastes lovely. Most of the time, the dairy-form is used but this recipe uses Coconut Condensed Milk which is vegan!
In fact, we Asians love to add it to our coffee or tea if we're feeling fancy! That's how this recipe was inspired. I decided to flavour these bites with Organic Traditions Focus Fuel Coffee mix with the sweet condensed milk. Their vegan coffee mix is instant and delicious especially with a yummy creamer of your choice.
Now you don't have to use their instant coffee mix for this recipe. Feel free to use whatever instant coffee you have on hand!

For this recipe
You will need the following ingredients for my coconut energy balls with coffee:
- ¾ cup Raw Shelled Almonds
- ⅓ cup pitted dates
- ½ tbsp Dark Chia Seeds
- 4 tsp Organic Traditions Focus Fuel Coffee Mix
- ½ tsp cocoa powder
- 1 tbsp Coconut Oil
- 2 tbsp sweetened condensed coconut milk
- Optional: ⅓ cup coconut flakes for coating
How to make instant coffee energy balls
- In a food processor, pulse almonds into fine pieces. Then add in the dates and pulse until broken.
- Add in remaining ingredients except coconut flakes and pulse until well combined and blend into a big ball of dough.
- Roll into 1 inch bites. Coat in coconut flakes. Enjoy! Store in fridge.

Ingredients
- ¾ cup raw almonds
- ⅓ cup medjool dates pitted
- ½ tablespoon Chia Seeds
- 4 teaspoon Instant coffee
- ½ teaspoon cocoa powder
- 1 tablespoon Coconut Oil
- 2 tablespoon sweetened condensed coconut milk
- ¼ cup coconut flakes for coating
