BAKED LEMON SALMON RECIPE
Yields 4 pieces | Ready in 20 mins
1.5 lb wild caught salmon filet
Juice of 1/2 lemon
Grated rind of 1/2 lemon
1/2 tsp salt
1/4 black pepper
2 tbsp melted vegan butter
Clean fish and slice into 4 pieces.
In a large bowl, whisk together lemon juice, lemon rind, melted vegan butter, salt, and pepper.
Place salmon pieces into the marinade and let it sit at room temperature for 5 minutes.
Preheat oven to 400 degrees F. Lay salmon on greased baking sheet. Bake for 12 minutes until cooked. Serve with your favourite side and enjoy!
