Broccoli Potato Latkes. Delicious, healthy, savoury and so satisfying! These are also vegetarian and serve well as a side dish or appetizer.
The combination of the potatoes, onions, and broccoli make for a tasty appetizer! It is a great way to sneak in some veggies if you're trying to get your kids to eat more fiber.
This broccoli potato latkes recipe is fairly simple to make but just requires some time but well worth it because these taste so good!

For this recipe
You will need the following broccoli potato latkes ingredients:
- 5 organic yellow potatoes, peeled and food processed
- 1 small cooking onion, food processed
- 1 small organic broccoli crown, food processed
- 2 organic eggs
- ½ cup organic whole wheat flour
- 1 teaspoon sea salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Avocado oil for frying
- Optional: Serve with vegan or dairy free sour cream
- Required: Food processor and a cheese cloth for straining
How to make Broccoli Potato Latkes
- Food process your potatoes and onions together until grounded. Place in a cheese cloth and strain out as much liquid as you can. Then place into a large mixing bowl.
- Food process your broccoli and place into large mixing bowl.
- Into your mixing bowl, add in the rest of your ingredients except for the avocado oil. Mix until well combined.
- Heat a large non stick frying pan on medium high heat, add 1 teaspoon of oil. With an ice cream scoop, scoop the potato mixture onto your frying pan and flatten with a spatula. Fry on both sides until golden brown. Repeat process for the rest of the batter.
Can I freeze potato latkes?
Yes but when you fry them just be carefully not to add too much oil as the latke could contain water from being frozen and can splatter.
Can I make potato latkes in advance?
You may but when you store them, be sure to put wax paper in between each latke. Alternatively, you can make the batter ahead and store it in the fridge as a batter. Then when you're ready to cook them, shape them into pancakes for frying.
Can I bake potato latkes?
You may but traditionally they are more crispy and tasty when fried. If you do bake them, make sure to spray oil over each one and use a lined baking sheet.
My love for Latkes
I love latkes so much! I remember when I first was introduced to one in Grade 1 by my teacher. She made the classic ones in person and I remember the aroma coming from the portable gas stove (back then there were less safety rules in school lol).
But what an amazing memory. I think it's my first memory of my love for food. The best part was biting into it and realizing how amazing this dish is. And I believe that's when I also fell in love with potatoes.
