Chickpea Bell Pepper Salad Recipe (Vegan)
Serves 4 as a side
Ready in 10 mins.
1 can organic Eden Foods garbanzo beans or chickpeas
1/2 cup orange bell peppers, diced
1/2 cup yellow bell peppers, diced
1/4 cup green onions
1/2 cup Follow Your Heart vegan mayo
Juice of 1/2 lemon
1/2 tsp garlic, minced
1/4 tsp paprika
1/4 tsp black pepper
1/2 tsp salt
Strain your canned chickpeas. Add to a large mixing bowl and mash until most of the chickpeas have split. Add diced bell peppers. followed by the rest of your ingredients and mix until well combined.
Serve on toast with mashed avocado, in a sandwich or with tortilla chips. Enjoy!
