My Chinese vegetable lo mein recipe is super easy to make and is a great addition to any meal especially if you're looking to increase your vegetable intake! It's packed with vegetables like gai-lan or chinese broccoli, bell peppers, and bean sprouts.
Growing up my mother used to make all sorts of noodles but lo mein was definitely a hit within our family. And now I'm sharing this recipe with you so you can have vegetable lo mein at home!
You can of course adjust the amount of sodium in this recipe to your liking and reduce the amount of Oyster or Vegetarian Stir Fry sauce to lower your salt intake.

For this recipe
You will need the following ingredients for my super easy vegetable lo mein:
- 1 package Cantonese Style Chow Mein Noodles
- 3 cups chinese broccoli or gai lan chopped into bite size pieces
- 2 teaspoon garlic, minced
- 4 cups bean sprouts, washed and drained
- 1 orange bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- ½ teaspoon salt
- 1 tablespoon sesame oil
- 1 teaspoon rice mirin
- 2 teaspoon low sodium soy sauce
- ¼ teaspoon black pepper
- 4 tablespoon oyster sauce (or Vegetarian Stir Fry sauce to make it vegan)
- 2 tablespoon avocado oil for cooking
Required Tool: Wok
How to make vegetable lo mein
- In a pot, blanch your noodles for 1 minute until loosened. Rinse with cold water and drain.
- Then in a large non-stick wok set over high heat, add 1 tablespoon avocado oil. Sauteed chinese broccoli, bell peppers and garlic first. Then add bean sprouts. Season with 1 teaspoon soy sauce, salt, sesame oil, rice mirin, black pepper. Cook until veggies are soft and most of the liquid has evaporated. Remove veggies from wok and set aside.
- Add remaining avocado oil and noodles. Season with remaining soy sauce and oyster sauce. Fry until noodles began to steam. Add vegetables back in and mix well. Serve and enjoy!
