Dairy-Free Blender Vanilla Crepes Recipe
Serves 5 crepes

1 cup unbleached all-purpose flour
1 pinch salt
2 free-range eggs
2 tbsp maple syrup
1 1/2 cups oat milk
1/2 tsp vanilla extract
1 tbsp coconut oil
Coconut oil for cooking
Required Tool: Blender
In a blender, blend your dry ingredients until combined. Then add your wet ingredients and blend again until combined. The batter should be runny.
In a hot non-stick crepe pan or flat pan set on medium heat, lightly coat with coconut oil. Then pour about 1/3 – 1/2 cup of batter onto the hot pan and swirl the batter around until it fills the pan. Fry on each side until golden brown. Serve with your preferred fruit and toppings.
