Today I’m sharing a delicious treat. They are my Dark Chocolate Peanut Butter Oatmeal Cups! They taste like reese’s peanut butter cups but way better because they actually nourish you. The base of the cup is made with my favourite oatmeal bar by Made with Local. I truly enjoy the taste of their bars and I took some with me on my trip to Switzerland. They were very energizing as the ingredients do not contain any weird stuff! In fact all the ingredients are very nutritional. Chocolate Peanut Butter Oatmeal Cups Recipe (Vegan & Dairy-Free)
Serves 10 cups
1 .25 cups good quality peanut butter
1.25 cups dark chocolate chips
Splash of oat milk
3 Made with Local “Coconut in the Dark” bars or oatmeal bar of your choice, finely grounded
1 tbsp coconut oil
Coconut flakes for topping
Required Tools: Food Processor and SIlicone Muffin Liner
In a food processor, finely grind your oatmeal bars with coconut oil. Spoon 2 tbsp into a muffin liner and press down firmly with fingers. Even the layer out.
Next in a small pot set on low-medium heat, melt your chocolate chips with a splash oat milk. Mix well and remove off stove once smooth. Spoon 2 heaping teaspoons into each cup and level out with back of a spoon.
Lastly, scoop 1-2 tbsp of peanut butter into each cup. Wiggle the cup to even layer the peanut butter. Sprinkle coconut flakes on top. Carefully store your cups in a reusable tupperware and freeze them overnight. Enjoy the next day!
