Dill Pickle Potato Salad Recipe (Vegan)
Serves 5-6 as a side

10 medium EarthFresh organic yellow potatoes, unpeeled and diced
1/2 cup Follow Your Heart vegan mayo
1 cup dill pickles, finely chopped
1/2 cup fresh dill, finely chopped
1/3 cup green onions, finely chopped
2 tbsp dill pickle juice from the jar
1 tsp salt
1/4 tsp black pepper
Wash and dice potatoes, no need to peel them. Boil for 20 minutes until soft and easy to poke through with a fork.
Meanwhile, in a bowl, add dressing ingredients and mix until well combined.
Strain potatoes and while they are hot, pour into dressing. Fold dressing into potatoes. Refrigerate for at least 1 hour before serving. Enjoy!
