Today I’m sharing a 7-ingredient gluten-free Strawberry Oatmeal Bar that is delicious and very easy to make! They are so tasty served warm with some dairy-free whipped coconut cream as a dessert or as a healthy snack bar. Lately i’ve been trying to create more gluten-free recipes using oats. I love how oats are so fibrous and nutrient dense. They also keep me fuller longer and don’t cause my sugar levels to spike.
Did you know that “oats are rich in carbs and fiber, but also higher in protein and fat than most other grains. They are very high in many vitamins and minerals. Oats contain many powerful antioxidants, including avenanthramides. These compounds may help reduce blood pressure and provide other benefits.” They are also “are high in the soluble fiber beta-glucan, which has numerous benefits. It helps reduce cholesterol and blood sugar levels, promotes healthy gut bacteria and increases feelings of fullness. Due to the soluble fiber beta-glucan, oats may improve insulin sensitivity and help lower blood sugar levels.” Also they “may lower the risk of heart disease by reducing both total and LDL cholesterol and protecting LDL cholesterol from oxidation.” Source: Healthline

They are locally grown in Ontario greenhouses but they are certified pesticide free which is amazing! Gluten-free Strawberry Oatmeal Bar Recipe
- 8 x 8 inch baking pan
- high powered blender
- 1.5 cups organic rolled oats,
blended into a finely ground flour
- 1.5 cups organic rolled oats
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1.5 cups fresh strawberries
- 3/4 cup vegan butter
- Preheat your oven to 350 degrees F.
- In a mixing bowl, combine your finely ground oat flour, rolled oats, vegan butter, brown sugar, baking powder and salt. Using your hands, combine well.
- Then pour your oatmeal mixture into a 8 x 8 inch greased baking pan. Press your diced strawberries into the batter and flatten with a spatula. Bake for 35-40 minutes. Enjoy!
