Oatmeal Hemp Chocolate Cookies. Delicious, easy to make with a healthy twist! They are perfect for dessert or a snack!
Soft chewy and so good with the chocolate chips! These are my favourite healthy cookie since they're packed with fiber thanks to the oatmeal and hemp! So they're not your average oatmeal chocolate cookies recipe.
My hemp oatmeal chocolate chip cookies only take 12 minutes to bake! And about 20 minutes to prepare the cookie batter. Pretty quick if you ask me!
I really love that my hemp chocolate oatmeal cookies don't harden! They stay pretty soft as long as you store them in an air tight container!

For this recipe
You will need the following ingredients for my hemp oatmeal chocolate cookies recipe:
- ½ cup vegan butter room temperature
- ½ cup brown sugar
- 1 tsp vanilla extract
- ¾ cup unbleached all-purpose flour
- ¼ tsp salt
- ½ tsp baking soda
- ¼ cup boiling water feel free to add more water 1 teaspoon at a time to get the right cookie dough consistency
- 1 cup quick-cooking oats
- ¾ cup semi-sweet vegan chocolate chips
- 1 - 2 tbsp hemp seeds
- Required: Lined baking sheet
How to make Hemp Oatmeal Chocolate Chip Cookies
- Beat butter, sugar and vanilla until light and fluffy. Add flour and salt and mix until well combined.
- Dissolve baking soda in boiling water and add to the mixture. Stir in rolled oats, chocolate chips and hemp seeds.
- Taking about 1 tablespoon of cookie dough in your hand, roll it into a ball and add to lined baking sheet. Flatten the dough ball with hand into a cookie shape. Repeat this process. Bake at 350 degrees F for 12 minutes max (do not overcook).
