
HK Avocado Egg Toast. An Asian twist to the classic avocado egg toast idea with soy sauce and sesame flavours. Perfect for breakfast, lunch, or as a snack.
These Hong Kong style scrambled eggs are so soft and fluffy! Sometimes I feel like pictures don't do the taste and texture justice. The eggs are also creamy and dairy-free.
Since I love Avocado Egg Toast, I decided why not give it an Asian twist. To give these eggs that Hong Kong flair, all you need to do is mix the egg with your milk of choice (opt for vegan milk if you're dairy-free), soy sauce and sesame oil prior to scrambling it. This makes the eggs more softer, flavourful and delicious. If you're not dairy-free, you can use cream.
Avocado is optional!
It's really optional to have this toast with an avocado. Usually in Hong Kong, these Cantonese style scrambled eggs is served between two fluffy pieces of buttered milk bread and a fried piece of ham. The combination is so simple yet so delicious!

For this recipe
You will need the following ingredients for this Chinese fluffy omelette toast:
- 2 eggs
- ¼ tsp soy sauce
- 2 ½ tbsp oat milk or milk of choice
- 1 piece fluffy white bread
- Vegan butter for cooking and toast
- Optional: ½ avocado peeled and thinly sliced
- Optional garnish: hot chili flakes
How to make Hong Kong style scrambled eggs on toast
- Whisk together your eggs, soy sauce, oat milk until smooth.
- Melt vegan butter in your pan over low-medium heat, then add your egg mixture. Slowly stir it with a spatula until cooked, soft, and creamy. Do not over cook.
- Toast your bread and spread some butter on your toast. Layer with cooked eggs.
- Optional: Create your avocado rose by watching this video
- Optional: Carefully lay avocado rose on top of your eggs. Sprinkle overtop with hot chilli flakes.
