JAPANESE SWEET POTATO FRIES RECIPE AND GARLIC AIOLI DIP RECIPE (Vegan)
Serves 2 as a side | Prep time 20 mins | Cook Time 20 mins
3 medium sized purple Japanese sweet potatoes, peeled
Water for boiling
1 tsp Salt
1 tsp garlic powder
1 tbsp avocado oil
Vegan Garlic Aioli
1/2 cup Follow Your Heart vegan mayo
Juice of 1/2 lemon
1 tsp garlic, minced
Sprinkle of paprika powder
Required: Air Fryer or convention oven
Peel sweet potatoes and boil in hot water for 7 minutes. Remove potatoes from pot, cool down and slice into thick fries. Tip: Boiling them in hot water makes it easier to slice.
Preheat air fryer to 160 degrees C.
Toss fries in avocado oil, salt and garlic powder. Place fries into air fryer. You may need to divide into two batches depending on the size of your air fryer. Cook for 20 minutes until golden crispy brown. Tip: at 15 minute mark, give the fries a toss and cook for remaining time to loosen the fries.
Mix ingredients for vegan garlic aioli dip together in a small bowl and serve with fries.
