    Kimchi Omelette Sandwich

    Kimchi Omelette Sandwich. A delicious omelette made with kimchi and carrots served between toast and your favourite veggies. Perfect for lunch. It's also very easy to make!

    I love omelettes but they are so much better when served between toast in a sandwich. I thought I would give the classic omelette a Korean twist by adding in some kimchi.

    Kimchi Omelette Sandwich

    Kimchi is one of my favourite fermented vegetables to eat. It's delicious, salty, spicy cabbage that is packed with probiotics as well! I think I could have it daily if I had an unlimited supply of it.

    If you're new to kimchi, this kimchi egg omelette sandwich is a great way to introduce it. It is an acquired taste as some do not like it in the start but as you continue to eat it, you grow to really enjoy it.

    For this recipe

    You will need the following ingredients for this kimchi omelette sandwich:

    • 1 egg
    • 2 tablespoon kimchi, finely chopped
    • 3 tablespoon carrots, sliced into matchsticks or diced
    • ½ teaspoon vegan butter
    • 2 pieces whole wheat bread, toasted
    • 2 slices of tomato
    • Lettuce
    • Organic Ketchup, as desired

    How to make a kimchi egg sandwich

    1. In a small bowl, whisk together egg, carrots and kimchi. Into a non-stick pan set on medium heat, pour omelette mixture in. Fry on each side until golden brown.
    2. Meanwhile, toast your bread. Once omelette has been fried, assemble your sandwich with tomato, lettuce and some ketchup (as desired). Enjoy!
