Kimchi Omelette Sandwich Recipe (Vegetarian)
Ready in 10 minutes
2 tbsp kimchi, finely chopped
3 tbsp carrots, sliced into matchsticks or diced
1/2 tsp vegan butter
2 pieces whole wheat bread, toasted
2 slices of tomato
Organic Ketchup, as desired
In a small bowl, whisk together egg, carrots and kimchi. Into a non-stick pan set on medium heat, pour omelette mixture in. Fry on each side until golden brown.
Meanwhile, toast your bread. Once omelette has been fried, assemble your sandwich with tomato, lettuce and some ketchup (as desired). Enjoy!
