Korean Omelette Sandwich. A popular Korean breakfast sandwich sold by street food vendors. It's delicious and packed with cabbage, carrots and green onion.
Usually the street food version is accompanied with ham and cheese but I wanted to make mine vegetarian.
I love this sandwich so much! It's really a great way to get in some fiber and protein at the same time. It's great for those who are vegetarians who consume eggs too!
This sandwich is also savoury but sweet thanks to the sugar and ketchup. If you're trying to reduce your sugar content just don't add as much sugar and ketchup. But these two ingredients are necessary to make it yummier!
On the streets of Korean, they usually grill this sandwich on a grill plate with a lot of butter. Like a lot. So my version is healthier as it doesn't contain so much of it.

For this recipe
You will need the following Korean street toast ingredients:
- 4 slices egg bread
- 3 eggs
- ⅓ cup cabbage, thinly sliced
- ⅓ cup carrots, sliced into thin matchsticks
- ¼ cup green onions, finely chopped
- 1 teaspoon vegan butter
- 2 tablespoon organic ketchup
- Sprinkle of organic cane sugar
- Pinch of salt
How to make Korean street toast
- In a medium bowl, whisk eggs and mix in sliced cabbage, carrot matchsticks and green onions. Season with salt.
- In a pan over high heat, add butter. Quickly pour in half the omelette mixture. Form omelette into a square shape. Fry on both sides until golden brown. Remove and set aside. Repeat process for the second omelette.
- Toast bread. Lay cooked omelette over toasted bread. Drizzle ketchup as desired and sprinkle a pinch of sugar. Close the sandwich with remaining toast and slice diagonally. Enjoy!
Optional: If you consume meat, fry up a piece of ham and add it to your sandwich along with a piece of cheddar cheese before drizzling on the ketchup and sugar.
