    Mushroom Leek Hand Pies

    Mushroom Leek Hand Pies. Flakey on the outside, soft and savoury on the inside. These vegetarian hand pies are so easy to make and only require 7-ingredients!

    My Mushroom Leek Hand Pies are such a great appetizer, snack or side dish idea! They contain mushrooms and leeks flavoured with some garlic seasoning all contained in a flakey puff pastry! 

    This recipe is similar to my Portobello Mushroom Wellington or my Mushroom Cups. I love the combination of puff pastry and mushrooms, as you can tell and I've listed the recipes below so you can check them out!

    For this recipe

    You will need the following ingredients for these mini mushroom hand pies:

    • 2 sheets of puff pastry, sliced into four even squares *Make sure to thaw your pastry if frozen*
    • 5 cups loosely packed cremini mushrooms, roughly chopped
    • 3 cups chopped leeks, finely minced
    • 1 tsp garlic powder
    • ¼ tsp dried thyme
    • ½ tsp sea salt
    • 1 tsp avocado oil

    Required: 2 baking sheets

    How to make a leek and mushroom hand pie

    1. In a skillet, sautéed mushrooms and leeks for 7 minutes until soft. Once cooked, stir in salt, thyme and garlic powder. Allow this to cool down.
    2. Preheat your oven to 375 degrees F.
    3. Slice your puff pastry sheet into four even squares. Scoop about ¼ cup of the mushroom filling into each square. Fold the square to make a triangle. Seal with some water. Using a fork, press down the edges.
    4. Transfer pies to a greased or lined baking sheet. Bake for 30 minutes rotating baking sheets halfway through. Allow to cool before eating. Enjoy!
