Pineapple Fried Rice. Sweet and savoury fried rice thanks to the pineapple chunks. This is a 30 minute vegan recipe if you have cooked rice ready. Perfect for dinner time.

I love this pineapple fried rice recipe. It is one of my favourite things to eat especially when I'm craving rice and I want it done quickly.

You can add any protein you'd like to this fresh pineapple fried rice. Such as a fried egg, shrimp, chicken, or pork for some extra flavour. I actually share a Chicken Pineapple Fried Rice version here.

Traditionally, this Chinese pineapple fried rice is usually served inside a pineapple for aesthetic. But ain't nobody got time for that! Unless you're looking to please your guests.

For this recipe

You will need the following ingredients for my healthy pineapple fried rice:

  • 2 cups jasmine rice, cooked according to package instructions
  • 1 ½ cups fresh pineapple, diced
  • 2 tbsp avocado oil
  • 1 small cooking onion, diced
  • 1 cup frozen peas and carrots
  • ⅓ cup ketchup
  • 1 cup frozen edamame beans
  • 2-3 tbsp soy sauce
  • salt to taste
  • ½ tsp black pepper
  • Eggs, as many as desired

How to make pineapple fried rice from scratch

  1. Over medium heat, fry onions in 2 tbsp of avocado oil until soft and translucent. Toss in frozen peas, carrots, and edamame beans. Fry until the vegetables begin to steam.
  2. Next add cooked rice and combine well with vegetables.  Season with salt to taste, pepper, soy sauce and ketchup. Stir thoroughly until rice is coated in ketchup and soy sauce.
  3. Lastly add in the pineapple and combine well with rice.  Remove from heat and serve.
  4. In the same wok, add 1 tsp of oil and fry your eggs (as many as desired) in whatever style you prefer! Serve over top of rice and enjoy!
