Potato Onion Waffle. Crispy on the outside, soft and flavourful with a hint of onion on the inside. A great dish for breakfast or brunch. Ready in less than 35 minutes!
These potato waffles also only requires six ingredients, most of which you probably have in the pantry and a waffle maker. Now if you don't have a waffle maker, you can turn this recipe into potato pancakes and frying them on a non stick pan. This way you won't miss out on these deliciousness!

I'm also using EarthFresh organic yellow russet potatoes for my potato waffle recipe. They have also kindly sponsored this recipe post! I really enjoy the freshness and taste of their potatoes. They never fail me and they are the only organic producer of potatoes that I can find in my area.
I truly enjoy eating potatoes. Potatoes have gotten such a bad rap when they are actually very nutritious! In fact, when potatoes are cooked and cooled down they form a resistance starch which acts like a fiber. Fiber helps with healthy digestion and gut health. (Source: Healthline)
What is a potato waffle?
It's shredded or grated potatoes, mixed with a wet agent like egg and flour agent to combine it together. Then it's cooked inside a waffle maker.

I love potatoes and think they are hyped wrongly as carb-high despite the proven benefits of it rendering a fibrous effect. Thanks Christie your waffles look better than store bought.

Very delicious and the onion flavour complimented the potatoes so well.
