Hope your week is off to a good start. I wanted to share a very easy and simple dessert recipe with you. It’s a Raspberry Nice Cream. What’s “Nice Cream”? It’s dairy-free iced cream using frozen bananas as the “cream” base blended with nut-milk, vanilla extract and frozen raspberries. Now for all you skeptics out there who are wondering how Nice Cream could replace Ice Cream? Well I’d encourage you to try it and tell me what you think. It tastes almost like the real thing without that the dairy aftertaste. The great thing is that you can swap out the main fruit with your favourite kind.
For this recipe, I’m using organic frozen bananas, organic frozen raspberries Earths Own Almond Fresh Vanilla Milk, and Vanilla Extract. I froze the fruits myself rather than purchasing packaged frozen fruit. I typically will do this with any leftover fruit in my fridge to reduce on food waste. You’re also saving money too by doing this as frozen organic fruit is heavily marked up.

RECIPE | RASPBERRY NICE CREAM (VEGAN)
SERVES 2 SMALL BOWLS | PREP TIME 5 MINS
- 2 bananas, peeled, sliced & frozen
- 1/3 cup frozen raspberries
- 1/3 cup of vanilla nut milk of your choice (I use almond)
- 1 tsp organic vanilla extract
Required: Food processor
In a food processor, blend all the ingredients until smooth. Serve immediately or if you like it very cold, scoop it into a reusable container and freeze it for 3-4 hours. Enjoy!
