Roasted Potato Caesar Salad. Savoury, delicious, vegan and nutritious. A great side dish for lunch and fairly simple to make.

Today I’m sharing a delicious way to warm up your salad with this warm potato salad with caesar dressing.
This salad is filled with flavourful potatoes and leafy greens smothered in a creamy vegan Caesar dressing, along with crunchy red peppers and green peas.
You can make your own Caesar dressing with a recipe that I've shared below from another blog or use store bought vegan dressing. The choice is up to you!

This is a great meal to have when you want something light yet also filling and delicious! Also fantastic if you have leftover roasted potatoes that you can easily warm up to toss into your salad.

For this recipe
You will need the following ingredients for my creamy Caesar potato salad:
Roasted Potatoes:
- 1 lb baby tri-coloured baby potatoes, sliced
- 2 tbsp extra virgin olive oil
- 1 tsp paprika powder
- ½ tsp garlic powder
- 0.5 tsp salt
- ½ tsp pepper
Salad:
- 1 Romaine lettuce, chopped
- ½ cup peas, boiled and cooled
- ½ cucumber, peeled into ribbons
- 1 red bell pepper, diced
- Croutons
Vegan Dressing Recipe is from Loving it Vegan:
- 1 Tbsp Dijon Mustard
- 2 Tbsp Nutritional Yeast
- ½ cup Vegan Mayonnaise
- 1 tsp Crushed Garlic
- 2 tsp Capers
- 2 Tbsp Lemon Juice
- 1 Tbsp Soy Sauce*
- One Tbsp Maple Syrup
- 1 Tbsp Extra Virgin Olive Oil
- ¼ tsp White Vinegar
Required: Blender
How to make warm Caesar potato salad
- Preheat oven to 450 degrees F.
- Boil sliced potatoes in water for 15 minutes.
- Evenly spread boiled potatoes on lined baking sheet. Sprinkle spices, salt and drizzle oil over top. Massage spices and oil into potatoes.
- Bake for 20 minutes until roasted and crispy.
- Meanwhile, in a blender, blend together your ingredients to create your vegan Caesar dressing.
- Add to salad and top off with your homemade dressing. Enjoy!
