Today I’m sharing a very easy and delicious way to make an Asian style omelette over toast with avocado. This is my Sesame Soy Scallion Omelette Toast recipe. It only takes 10 minutes and it’s great for breakfast or lunch.

Sesame Soy Scallion Omelette Toast Recipe
Serves 1 piece
Ready in 10 minutes
2 free-range eggs, scrambled
2 tbsp scallion, finely chopped
1/2 tsp sesame oil
1/2 tsp soy sauce
1/2 tsp dairy-free butter
Optional topping: Half an avocado
In a bowl, whisk together eggs, chopped scallions, sesame oil and soy sauce.
In a hot skillet set over low-medium heat, melt butter and pour egg mixture in. Continue stirring with a spatula until the egg slowly forms a soft omelette.
Lay over some toast and top off with some avocado. Enjoy!
