My shrimp bok choy and noodles stir fry is easy to make and comes together quickly in under 30 minutes! The taste of the salty sweet scallion noodles with the soft bok choy and meaty shrimp is delicious!

I really enjoy shrimp every now and then. I remember growing up my grandmother loved eating shrimp and seafood in general and sometimes I wonder if that's how she lived till 93. She was incredibly sharp and my dad thinks it had something to do with the seafood. But who knows!
I remember she would steam or fry them with the shells on and the shells gave it such a superior flavour. In Asian cuisine, we always find a use for every part of an animal's body even the shrimp shells. In fact my mother would use the shells and make a delicious soup broth out of them!
These shrimp and bok choy noodles remind me of my grandmother's shrimp recipe and I definitely miss her to this day. She taught me how to cook many dishes and I'll never forget her. So I hope you enjoy my noodles with shrimp and bok choy and don't forget to check out the other recipes below!

For this recipe
You will need the following ingredients for my prawn bok choy noodle:
15-20 head-on unpeeled shrimps
2-3 cups baby bok choy peeled into leaves
400 grams spaghettini
3 tbsp oil
1 tbsp garlic minced
1 cup scallions chopped
⅓ cup water
3 tbsp soy sauce
1 tbsp dark soy sauce
4 tbsp honey
1 tbsp sesame oil
How to make shrimp bok choy noodle recipe
- Boil spaghettini to Al Dente for 5 minutes or according to package instructions. Do not overcook them. Strain and set aside.
- In a hot pan set over medium heat, add 1 tablespoon oil and fry your shrimp until cooked through. They should be pink throughout and the shrimps should curl. Remove the cooked shrimp and set aside.
- Into the same pan, add oil, garlic, scallions and bok choy. Fry until soft.
- Add cooked spaghettini followed by water and mix.
- Lastly add light soy sauce, dark soy sauce, sesame oil and honey. Mix into noodles until well coated.
- Transfer the noodles onto a serving plate and then place the shrimp over top. Enjoy!
