This shrimp salad sandwich recipe only requires several ingredients and it’s perfect for lunch or a light dinner especially if you enjoy shrimp!

I love this easy shrimp salad sandwich because of that soft fluffy bun paired with some fresh greens and the creamy shrimp salad inside. It's so good.
The great thing about this shrimp salad is if you make more, you can have it for a few days!

For this recipe
You will need the following ingredients for my easy shrimp salad sandwich recipe:
- 4 brioche buns
- fresh romaine lettuce
shrimp salad sandwich filling:
- 25 pieces of wild caught shrimp, peeled and deveined shrimp
- 1 teaspoon avocado oil for cooking
- ¾ cup mayo
- ½ cup celery, finely chopped
- ½ red bell pepper, finely diced
- 1 stalk green onion, finely minced
- ⅛ teaspoon black pepper
How to make Shrimp Salad Sandwich
- In a pan set over medium heat, add avocado oil and fry shrimp until pink through. About 3-4 minutes on each side. Remove from heat and place into a large bowl. Cut into pieces (use kitchen scissors for ease).
- Then add in celery, bell pepper and green onion with mayo with black pepper. Mix until well combined. Spoon into buns with some romaine lettuce. Serve and enjoy!
