The garlic butter on this mashed cauliflower is absolutely amazing. The flavours just compliment each other so well.
I can't say this tastes exactly like mashed potatoes because you can taste the cauliflower but it tastes so good with some gravy!

I wanted to keep this recipe as simple as possible by limiting the ingredients to 6 and no more. A lot of people will add milk to theirs but I'm using the water that the cauliflower was boiled in and trust me, it tastes just as creamy!
This vegan garlic mashed cauliflower recipe is awesome if you're trying to get more vegetables into your diet. Especially vegetables with more fiber in it! It's also a great dish to sneak in those veggies if your kids are picky eaters.

For this recipe
You'll need the following ingredients for my vegan mashed cauliflower recipe:
- 1 cauliflower head, chopped
- ½ tsp garlic powder
- 3 tbsp vegan butter
- 1 tsp salt
- Pinch of black pepper
- 4 tbsp of reserved cauliflower cooking water
Required: Immersion Blender
How to make vegan mashed cauliflower
- Boil your cauliflower in hot water for 15 minutes until tender. Reserve 4 tbsp of hot water for later. Strain cauliflower. Add cauliflower back into the pot.
- Add garlic powder, vegan butter, salt, black pepper. Using an immersion blender, blend until fluffy and smooth. Serve and enjoy!
