I’m sharing a super easy quick vegan mascarpone recipe with you that I made up because I wanted a sweet cheesy cream to accompany my fruit toast! I noticed there’s not a lot of vegan mascarpone recipes so I figured I need to post one.
For this recipe, I’m using plain vegan cream cheese by Tofutti, lemon juice and vegan icing sugar by Wholesome Sweet.

VEGAN MARSCAPONE RECIPE
SERVES 1 | PREP TIME 5 MINS
6 tbsp plain vegan cream cheese
1.5 tsp lemon juice
2 tsp icing sugar or more as desired
In a bowl, whisk together vegan cream cheese, lemon juice and icing sugar until fluffy and smooth.
Serve with your favourite toasted bread with any sliced fruit of your choice on top. Feel free to add crushed nuts and drizzle sweetener like Agava on top. Enjoy!
