Today I’m sharing a tasty and quick Vegan Mushroom Garlic Asparagus Pasta Recipe. This pasta is light in sauce but has a “cheesy” taste thanks to the nutritional yeast. Perfect for dinner or lunch. Serves well as a leftovers.

Vegan Mushroom Asparagus Pasta Recipe
Ready in 30 minutes or less
500 grams small rotini pasta
3 tbsp vegan butter
6 cloves garlic, minced
1 pint cremini mushrooms, sliced into quarters
2 cups asparagus, chopped into 1 inch pieces
1/4 cup quality white wine
2/3 cup hot pasta water
1 tsp salt
1/2 tsp black pepper
1 tbsp nutritional yeast
Boil your pasta according to packet instructions. Reserve 2/3 cup hot pasta water for later. Strain pasta and set aside.
In a hot skillet set over medium high heat, melt butter. Add garlic and saute until fragrant. Add mushrooms and asparagus. Fry until mushrooms are browned. Pour in white wine.
Add in your pasta, followed by salt, pepper, nutritional yeast and hot pasta water. Mix until well combined. Serve and enjoy.
