Blueberry Oat Blender Pancakes Recipe (Vegetarian, Dairy-Free)
Serves 9 mini pancakes

1 1/2 cups organic Bob’s Red Mill rolled oats, blended until grounded
3 1/2 tsp baking powder
1 tsp salt
1 tbsp organic cane sugar
1/2 cup wild local blueberries, washed and dried
Coconut oil for cooking
In your high power blender, add all dry ingredients and blend until finely ground.
Then into the blender add wet ingredients and blend again until smooth and combined. Then pour in blueberries and mix gently with a spatula.
In a hot skillet, set on medium heat. Lightly brush pan with coconut oil. Pour 1/4 cup of batter into hot pan. Alternatively, you can pour batter from blender if you’re not particular about the pancake size.
Allow pancakes to bubble on the top before flipping. Fry on each side until golden brown. Serve with more berries, dairy free yogurt and maple syrup!
