Easy & Simple Boba Mint Chocolate Mousse

  • In a medium size pot, combine together your mousse ingredients.
  • Bring this mixture to a boil over high heat.
  • Boil for 1 minute, then remove off heat and immediately pour into your silicone moulds or small dessert bowls. Optional: You may run the mixture through a sieve to make the mousse more smooth.
  • Refrigerate mousse for at least 3-4 hours or overnight.
  • On the day of serving, bring a large pot of water to boil over high heat. Add bobas. Reduce to medium heat to simmer for 25 minutes or cook according to package directions. Do not cover. Stir every now and now.
  • Remove pot of bobas from the heat, cover with a lid and let bobas sit in the water for another 20 minutes.
  • Strain and rinse bobas under warm water.
  • Place the bobas in a large bowl and mix in brown sugar.
  • Remove your mousse from the fridge and carefully remove the mousse from the molds or leave in the dessert bowls to serve.
  • Spoon as many bobas over your mousse. Enjoy!

Notes

Note: If you have bobas leftover so store the remainder in the fridge in an airtight container. It will last 4-5 days and you can use it for other recipes.
