Quick Easy Sesame Sausage Udon Stir-fry

Sesame Sausage Udon Stir-fry. Chewy thick udon noodles stir-fried in a sweet savoury sesame sauce with sausage, egg and leafy greens. An Asian-fusion noodle dish that will keep you coming back from more because it is so delicious! A great option for a quick and easy dinner or lunch. Ready in just 30-minutes or less!

Ingredients
 
 

  • 2.2 lb udon noodle frozen kind recommended
  • ½ lb breakfast sausages pork maple flavoured, sliced
  • 2 eggs whisked
  • 2.5 cups yu choy or bok choy, chopped
  • 2 green onion finely sliced
  • 1 teaspoon vegetable oil or any neutral oil

Noodle sauce:

Optional:

  • 1 green onion finely chopped for garnish
  • ½ teaspoon Sesame seeds for garnish

Instructions
 

  • In a small bowl, combine noodle sauce ingredients. Set aside.
  • Soak frozen udon noodles in hot boiling water just until loosened. Strain immediately and set aside.
  • Heat vegetable oil in a large pan on medium heat. Fry sliced breakfast sausages. Cook until no longer pink.
  • Add green onions and allow these to cook for 20-30 seconds until fragrant.
  • Next pour in beaten egg. Allow this to cook and then break apart into bite size pieces.
  • Mix in yu choy and cook until wilted.
  • Toss in udon noodles and add noodle sauce until well combined. The sauce should thicken. If needed, increase to medium high heat to help thicken the sauce.
  • Remove off heat. Garnish with green onions and sesame seeds. Enjoy!
