Sesame Sausage Udon Stir-fry. Chewy thick udon noodles stir-fried in a sweet savoury sesame sauce with sausage, egg and leafy greens. An Asian-fusion noodle dish that will keep you coming back from more because it is so delicious! A great option for a quick and easy dinner or lunch. Ready in just 30-minutes or less!
In a small bowl, combine noodle sauce ingredients. Set aside.
Soak frozen udon noodles in hot boiling water just until loosened. Strain immediately and set aside.
Heat vegetable oil in a large pan on medium heat. Fry sliced breakfast sausages. Cook until no longer pink.
Add green onions and allow these to cook for 20-30 seconds until fragrant.
Next pour in beaten egg. Allow this to cook and then break apart into bite size pieces.
Mix in yu choy and cook until wilted.
Toss in udon noodles and add noodle sauce until well combined. The sauce should thicken. If needed, increase to medium high heat to help thicken the sauce.
Remove off heat. Garnish with green onions and sesame seeds. Enjoy!
