Easy & Simple Vegan Greek Rice

Vegan Greek Rice. Fluffy rice packed with a savory, lemony flavor with fresh dill, peas and carrots. It's perfect as a side dish to any main dish for dinner or lunch. This easy rice recipe only takes 35 minutes to cook!

Ingredients
  

  • 2.5 cups white long-grain rice uncooked
  • 3 cups vegetable broth
  • ½ cup peas frozen
  • ½ cup carrot frozen
  • 4 tablespoon extra virgin olive oil
  • 2 tablespoon lemon juice
  • 3 teaspoon salt
  • ¼ teaspoon garlic powder
  • 3 teaspoon fresh dill finely chopped for garnish

Instructions
 

  • In a large non-stick pan on medium-high heat, add olive oil. Add in the rice and fry for 2 minutes.
  • Add lemon juice, salt, garlic powder, peas and carrots, and vegetable broth. Stir to mix. Bring to a boil.
  • Once it boils, reduce to medium heat and simmer for 22-30 minutes covered until the rice tastes soft and fluffy and the rice has absorbed all the liquids. Occasionally stir the rice to avoid it from sticking to the base of your pan but don't over do it.
  • Remove from heat and fluff the rice with a fork. Garnish with chopped dill. Serve and enjoy!
