Tomato Egg Fried Rice. Fried rice in a tangy savoury tomato soy-based sauce with luscious eggs and aromatic green onion. A simple dish that is both delicious and satisfying and comes together in just 15 minutes with day old rice. Great as a meal!
Break up your day old cooked rice into granules with clean hands or rice paddle.
In a hot pan or wok set over medium high heat, add 1 teaspoon vegetable oil followed by beaten eggs. Stir and cook eggs until they take shape. Once they take shape and are still moist, quickly remove off heat and transfer to a plate.
Back into the pan, add 1 teaspoon of vegetable oil followed by green onions and cook for 20 seconds or until fragrant. (Optional: This is where you may add in diced spam/hot dogs and cook until golden brown).
Then add diced tomatoes and minced garlic. Mix everything together and allow the juices to evaporate, a few minutes.
Once the juices have evaporated, add rice followed by dark soy sauce, oyster sauce, ketchup, sesame oil and eggs. Toss everything together until each granule is coloured brown and the rice is steaming hot. Serve and enjoy with more green onions for garnish (optional)!
