Ingredients

Pancake batter:

  • 10 large shrimp peeled and deveined
  • 1 green onion chopped into 1 inch pieces
  • 1 leek thinly sliced into 1 inch long matchsticks
  • ¾ cup all purpose flour
  • ¾ cup water cold
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • 1 large egg

Dipping sauce:

Instructions

  • In a large bowl, combine pancake ingredients. Mix until well combined.
  • Heat a large pan on medium high heat. Add 2-3 tablespoon of vegetable oil. Pour half batter in to make a big pancake or ladle about ½ cup of batter to make smaller pancakes. Spread the pancake out thinly.
  • Fry on each side until golden crispy brown on each side. It's okay if the leeks are a bit charred, this actually adds flavor.
  • In a small bowl, combine sauce ingredients and serve with pancakes.
