Grease two baking sheets with avocado oil. Preheat your oven to 450 degrees F.
Wash and dry potatoes. Leave unpeeled and thinly slice them into french fries, about 0.5 cm x 1 cm each. Evenly spread the fries onto your baking sheets. Season with pepper, salt and garlic powder. Drizzle some avocado oil over top and massage the spices and oil into the fries. Bake for 30 minutes. Flip half-way through.
Meanwhile in a small frying pan on medium heat, add 1 teaspoon of avocado oil. Add the chopped shallots followed by the black beans. Next season with paprika, salt and pepper. Gently fry the beans for about 5-7 minutes. Set aside.
Remove the fries from the oven. While fries are hot, sprinkle the black beans and cheese over top to allow it to melt. Serve fries onto two large or 4 small plates. Add a scoop of sour cream, followed by diced tomatoes, diced avocados, and chopped green onions. You can sprinkle some more cheese as desired. Serve and enjoy!
