Chinese Battered Shrimp. Savoury, chewy, soft with a slight crisp. A delicious side dish for dinner or lunch.

- 20 shrimps peeled and deveined
- ¼ cup green onion finely chopped
- 3 tablespoon avocado oil
- 1 red chili sliced for optional garnish
In a large mixing bowl, add flour, garlic powder, onion powder, and salt. Whisk together. Then crack in eggs and whisk until well combined.
Pat dry your shrimp and add it to the batter. Coat it well in the batter. Let it rest of 5 minutes.
Then in a non-stick frying pan over medium heat, add avocado oil.
Add in shrimp one at a time. Make sure to let excess batter drip back into the mixing bowl before adding to hot pan.
Then add chopped green onions on top of shrimps while the batter is still wet.
Fry until golden brown on one side. Then flip to fry on the other side until golden brown. Enjoy with optional garnish of red chillies
