Ingredients
  

  • 600 grams tofu extra firm, diced
  • 6 cloves garlic minced
  • teaspoon ginger  chopped
  • 1 red chili pepper sliced
  • 2 green onion chopped
  • 1 teaspoon white granulated sugar
  • 1.5 tablespoon Shoaxing wine or Dry Sherry Wine
  • 3 tablespoon vegetable oil for frying
  • Salt and Pepper to taste

Marinade:

  • In a large mixing bowl, combine tofu marinade ingredients. Set aside. The batter will be sticky but this is normal.
  • Dice your tofu into cubes and pat them dry. Add tofu to the marinade and mix well. Allow this to sit for 5 minutes.
  • Heat vegetable oil or any neutral oil in a large pan on medium heat.
  • To the pan, add in the marinated tofu shaking off any excess batter and fry in small batches. Fry your tofu until golden brown on each side.
  • Finally, add in garlic, ginger, red chili, cane sugar, green onions, and dry sherry over your tofu and quickly stir fry. Season with salt and pepper to taste. Enjoy!
