Ingredients
  

  • 4 bun brioche kind
  • 4 leaves romaine lettuce or as needed

Shrimp salad filling

  • 25 pieces shrimp peeled and deveined shrimp
  • 1 teaspoon avocado oil for cooking
  • ¾ cup mayonnaise
  • ½ cup celery finely chopped
  • ½ red bell pepper finely diced
  • 1 stalk green onion finely minced
  • teaspoon black pepper

Instructions
 

  • In a pan set over medium heat, add avocado oil and fry shrimp until pink through. About 3-4 minutes on each side.
  • Remove from heat and place into a large bowl. Cut into pieces (use kitchen scissors for ease).
  • Then add in celery, bell pepper and green onion with mayo with black pepper. Mix until well combined. Spoon into buns with some romaine lettuce. Serve and enjoy!
