Tofu Vegetable Chow Mein. Chewy egg noodles stir fried with a variaty of veggies with tofu in a light soy-based sauce. A quick and easy main dish that comes together in 30 minutes.

  • Soak your chow mein noodles in hot boiling water for 30 seconds until loosened. Strain in a colander and set aside.
  • Heat a large pan on medium high heat, with 1 tablespoon of vegetable oil, fry your diced tofu on all sides until evenly browned. Remove and set aside.
  • Add another 1 tablespoon of oil and sauté garlic, carrots, celery, cabbage and snow pea leaves until they are softened. Remove and set aside.
  • Add 1 tablespoon of oil and toss in the noodles. Season with salt, pepper, regular and dark soy sauce, and sesame oil. Toss noodles with seasoning until they’re evenly coated.
  • Then toss back in the vegetables and tofu. Garnish with sesame seeds.
