Ingredients
  

  • 2 potatoes unpeeled and sliced into 0.5 cm thick rounds
  • 2 potatoes unpeeled and cut into diced taters
  • 2 potatoes unpeeled and sliced into wedges
  • 2 potatoes unpeeled and sliced into fries
  • 2 sweet potatoes unpeeled and sliced into 0.5 cm thick rounds
  • 2 sweet potatoes unpeeled and sliced into wedges
  • 2 tbsp avocado oil
  • salt
  • cup ketchup
  • ⅓ cup cup Vegan Mayonnaise
  • Optional: Fresh parsley

Vegan Sriracha Mayo

Instructions
 

  • Preheat the oven to 450 degrees F.
  • On one baking sheet, spread taters and rounds evenly into one layer. Drizzle avocado oil over top and sprinkle some salt.
  • On another baking sheet, spread your fries and wedges evenly. Drizzle avocado oil over top and sprinkle some salt.
  • Place both trays in the oven. Bake the tray with the rounds and taters for 30 minutes, flipping them over halfway and alternating between bottom and middle rack
  • Bake the tray with the fries and wedges for 40 minutes, flipping them over halfway and alternating between bottom and middle rack
  • Serve them on your board with a variety of your favourite dips. For the vegan sriracha, combine your vegan mayo and sriracha together.
  • Optional: Garnish the board with fresh herbs
