Broccoli Potato Latkes. Delicious, healthy, savoury and so satisfying! These are also vegetarian and serve well as a side dish or appetizer.

Ingredients
  

  • 5 potatoes peeled and food processed
  • 1 yellow onion food processed
  • 1 crown broccoli food processed
  • 2 eggs
  • ½ cup whole wheat flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 3 tablespoon Avocado oil for frying
  • Optional: Serve with vegan or dairy free sour cream

Instructions
 

  • Food process your potatoes and onions together until grounded.  Place in a cheese cloth and strain out as much liquid as you can. Then place into a large mixing bowl.
  • Food process your broccoli and place into large mixing bowl.
  • Into your mixing bowl, add in the rest of your ingredients except for the avocado oil. Mix until well combined.
  • Heat a large non stick frying pan on medium high heat, add 1 teaspoon of oil. With an ice cream scoop, scoop the potato mixture onto your frying pan and flatten with a spatula.  Fry on both sides until golden brown.  Repeat process for the rest of the batter.
