Quick & Easy Protein Chocolate Chip Blondie

Protein Chocolate Chip Blondie. Soft, moist chocolate chip blondies with protein powder that you can barely taste! This baked good is ready in 30 minutes!

Ingredients
  

Wet Ingredients:

  • 2 ½ tablespoon coconut oil melted
  • 2 large eggs room temperature
  • 1 tablespoon vanilla extract
  • 4 tablespoon milk or sub with oat milk, nut milk or soy milk

Dry Ingredients:

  • 1 ½ cups all-purpose flour or sub with gluten-free oat flour if you're gluten-free
  • ¼ cup cane sugar or coconut sugar or brown sugar
  • 2 tablespoon protein powder ideally coffee or chocolate flavored
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 3 ½ tablespoon mini chocolate chips not the regular sized kind as they're too big

Instructions
 

  • Preheat the oven to 300 degrees F. Grease a 9-inch square pan with some coconut oil or line it with parchment paper.
  • In a large bowl, combine wet ingredients.
  • In another large bowl, combine dry ingredients except for the chocolate chips. Pour the dry ingredients into the wet ingredients. Stir in the chocolate chips last.
  • Pour blondie batter into the square pan and evenly spread with a spatula so it's flat. Bake for 12-15 minutes until a wooden toothpick inserted in the middle comes out clean.
  • Allow it to cool down completely before slicing into squares to serve.
