Vegan Garlic Chive Mashed Potatoes
Garlic Chive Mashed Potatoes. Creamy, vegan, delicious and easy to make. This is my favourite way of making dairy-free mashed potatoes. A perfect side dish.
Servings 5 as a side
- 8 yellow russet potatoes peeled and sliced at 1 cm thick
- 3 tbsp. vegan butter
- 1 cup plain oat milk
- 8-9 garlic cloves minced
- ¼ cup fresh chives finely chopped
- 1.5 tsp salt
In a large pot with boiling water, add sliced potatoes and lower heat to a medium for a rolling boil. Do not cover with a lid. Boil for 12 minutes or until you can easily poke a fork through. Strain the potatoes in a colander and set aside.
In the same pot set on low heat, add 3 tbsp. of vegan butter and minced garlic. Fry until fragrant and soft. Then add potatoes back into the pot along with almond milk and mash the potatoes.
Remove off heat, then add chopped chives and mix until well combined. Season with salt. Serve immediately and enjoy!
