Ingredients

  • 1 teaspoon butter for greasing the pan

Dry Ingredients

Wet Ingredients

  • 1 cup milk or sub with nut milk or oat milk
  • 2 large eggs
  • ¼ cup water cold
  • 2 tablespoon maple syrup or honey
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract

Instructions

  • In a large mixing bowl, whisk together the flour and salt. Sift in the matcha powder and whisk it into the flour mixture.
  • Then add in the wet ingredients. Whisk together until batter comes together. Do not over mix. It should be runny and not thick.
  • Grease a medium size pan (about 8-inches wide) with butter and a paper towel and bring to medium heat.
  • Once pan is hot, pour ⅓ cup into the pan. Swirl the batter to form a thin crepe. If you have a crepe spreader that would be the best tool to help flatten the batter. Fry until the bottom is cooked.
  • Flip over and fry on the other side until cooked. Repeat this for the remaining batter.
  • Enjoy with your favourite toppings, like nutella and fresh fruit (bananas or berries).
