Ingredients
  

  • 4 russet potatoes peeled and cut into thin matchsticks
  • 1 red chilli sliced (omit if you prefer no spice)
  • 1 tsp salt
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • ½ tsp sugar
  • 1 tbsp garlic minced
  • 4 tsp vinegar
  • 1 tbsp avocado oil
  • cup green onions sliced into 1 inch pieces

Instructions
 

  • Slice your peeled yellow potatoes into thin shreds. Try to ensure they are of equal size. Soak the shred in cold water for a couple of minutes and strain.
  • In a large non-stick pan set over high heat, add avocado oil, garlic, and red chilli. Be prepared for a coughing fit as the chillies are spicy!
  • Add shredded potatoes and mix in with the aromatics.
  • Season with salt, soy sauce, sugar, and sesame oil. Mix well. Cook for 8 minutes.
  • Finally add in green onions and vinegar. Mix again and serve.
