Ingredients
  

Dry

  • 3 cups oat flour or whole-wheat flour
  • 3 tsp Turmeric powder
  • ½ cup cane sugar
  • 2 tbsp flax meal
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Wet

  • 1 ½ cup dairy-free yogurt
  • 2 tbsp fresh lemon juice
  • 2 eggs
  • 8 tbsp vegan butter melted and cooled

Instructions
 

  • Preheat the oven to 375 degrees F. Grease the muffin pan with vegan butter or coconut oil.
  • In a mixing bowl, whisk together the dry ingredients: flour, sugar, salt, flax meal, Daily Turmeric Nutrient Booster Powder, baking powder and baking soda.
  • In a separate bowl, mix together the wet ingredients: yogurt, lemon juice, eggs and vegan butter. Then gently fold in the dry ingredients. Do not over mix as this will make muffins less tender.
  • With an ice-cream scoop, scoop batter into muffin pan. Bake for 20-22 minutes, rotating muffin tin halfway through baking. Bake until golden brown or until a reusable wooden stick is inserted into the middle and comes out clean.
