Healthy Lemon Turmeric Muffins (30-min. Recipe)
Healthy Lemon Turmeric Muffins. Healthy dairy-free lemon muffins with a hint of tasteless turmeric that are fluffy and great as a snack!
- 3 cups oat flour or whole-wheat flour
- 3 tsp Turmeric powder
- ½ cup cane sugar
- 2 tbsp flax meal
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cup dairy-free yogurt
- 2 tbsp fresh lemon juice
- 2 eggs
- 8 tbsp vegan butter melted and cooled
Preheat the oven to 375 degrees F. Grease the muffin pan with vegan butter or coconut oil.
In a mixing bowl, whisk together the dry ingredients: flour, sugar, salt, flax meal, Daily Turmeric Nutrient Booster Powder, baking powder and baking soda.
In a separate bowl, mix together the wet ingredients: yogurt, lemon juice, eggs and vegan butter. Then gently fold in the dry ingredients. Do not over mix as this will make muffins less tender.
With an ice-cream scoop, scoop batter into muffin pan. Bake for 20-22 minutes, rotating muffin tin halfway through baking. Bake until golden brown or until a reusable wooden stick is inserted into the middle and comes out clean.
