Boil spaghettini to Al Dente for 5 minutes or according to package instructions. Do not overcook them. Strain and set aside.
In a hot pan set over medium heat, add 1 tbsp oil and fry your shrimp until cooked through. They should be pink throughout and the shrimps should curl. Remove the cooked shrimp and set aside.
Into the same pan, add oil, garlic, scallions and bok choy. Fry until soft.
Add cooked spaghettini followed by water and mix.
Lastly add light soy sauce, dark soy sauce, sesame oil and maple syrup. Mix into noodles until well coated.
Transfer the noodles onto a serving plate and then place the shrimp over top. Enjoy!
