Craving a restaurant-style vegetable side dish tonight? This easy Chinese broccoli stir fry recipe hits the table in 10 minutes flat. The stalks stay perfectly crisp-tender under a rich, savory garlic glaze.
Wash the Chinese broccoli under cold water until it runs clear. Trim the ends of the stalks, peel the tough outer layer, and slice four small vertical slits into the base of each thick stem. Optional: chop the greens into 2-inch pieces.
Combine the oyster sauce, sesame oil, regular soy sauce, Shaoxing wine, and sugar in a bowl and whisk thoroughly.
Heat the vegetable oil on medium heat. Add the minced garlic and fry for 10 seconds until fragrant, ensuring the pieces do not brown or burn.
Toss the prepared Chinese broccoli into the hot oil and stir-fry for 2 minutes to coat the stalks completely in the garlic oil.
Pour the sauce and water into the pan, mixing quickly to coat the greens. Cover with a lid immediately and cook for 5 to 7 minutes until the thick stalks are fork-tender.
Transfer the greens and garlic to a plate, arranging the leaves on one side and the stalks on the other. Pour the remaining sauce over the top and cut the greens into thirds using kitchen shears.
