Ingredients

  • 4 oz dried knife-cut wheat noodles or ribbon-style wheat noodles
  • 2 tablespoon vegetable oil or any neutral oil
  • ⅓ cup cucumber julienned

Sauce:

Instructions

  • In a large heatproof bowl, combine all the sauce ingredients.
  • Heat vegetable oil in a small saucepan over medium-high heat until hot and shimmering, but not smoking. Carefully pour the hot oil into the bowl with the sauce ingredients, aiming for the sesame seeds to help reduce splattering. Be careful as the oil may splatter. Whisk until the sesame paste is fully incorporated and the sauce is smooth. Set aside.
  • Bring a medium pot of water to a boil. Add the knife-cut wheat noodles and cook according to package instructions, about 3-4 minutes, until tender but still chewy. Avoid overcooking.
  • Drain the noodles immediately and transfer them to the bowl with the sesame sauce. Toss until evenly coated. If the sauce is too thick, add a splash of hot water and toss again until creamy. Garnish with sliced cucumbers, extra green onions, and toasted sesame seeds. Serve immediately.
