Ingredients
 
 

  • 6 persian cucumbers (mini cucumbers)
  • ½ teaspoon salt

Dressing

  • 2 tablespoon regular soy sauce or light soy sauce
  • 1.5 tablespoon sesame oil toasted kind
  • 1 tablespoon Chinese black vinegar or rice vinegar / apple cider vinegar
  • ½ tablespoon sesame seeds toasted kind
  • 1 tablespoon white granulated sugar
  • 1 garlic clove grated / finely minced
  • 1 tablespoon Chinese chili oil

Instructions
 

  • Slice off both ends of the cucumbers, lay them flat, and smack firmly with the flat side of a knife until they crack open.
  • Cut the smashed cucumbers diagonally into ¾-inch-wide pieces.
  • Transfer the cucumber pieces to a large bowl, gently toss with salt, and let sit for 5-7 minutes to draw out excess water. Drain the liquid.
  • Rinse the cucumbers under ice-cold running water to remove excess salt and stop the salting process.
  • Drain thoroughly and shake off any remaining water so the dressing can cling to the cucumbers.
  • Add the dressing ingredients as listed above directly to the chilled cucumbers. Toss well to coat evenly and serve immediately or chill for 1 hour.
