10 Minute Easy Sesame Soba Noodles

Cold, springy soba noodles are tossed in a light, tangy sesame-soy dressing with green onions and roasted seaweed. This easy sesame soba noodles recipe is ready in just 10 minutes. Serve it chilled for a refreshing lunch, light meal, or side dish.

Ingredients
 
 

  • 6.34 oz soba noodles dry buckwheat kind
  • 1 green onion finely chopped
  • 2 teaspoon sesame seeds toasted kind
  • ½ half sheet nori cut into 1-inch long, ⅛-inch wide strips

Noodle Dressing:

  • Whisk the soy sauce, sesame oil, rice vinegar, and sugar in a small bowl until the sugar dissolves.
  • Bring a large pot of water to a boil over medium-high heat. Add the buckwheat soba noodles and cook until al dente, about 1 minute less than package directions. My noodles took about 5-6 minutes to cook.
  • Strain the noodles in a colander and rinse thoroughly under very cold running water until completely cool. Shake the colander well until the noodles are no longer dripping to remove as much excess water as possible.
  • Transfer the noodles to a large mixing bowl. Pour the dressing over the noodles, add the toasted sesame seeds and sliced green onions, and toss well.
  • Divide the noodles into bowls, top with nori strips, and immediately serve cold.
