Craving a fast, savory noodle bowl tonight? This easy lo mein noodles recipe comes together in just 20 minutes and serves well as a main or side dish. Expect chewy noodles tossed with crisp vegetables and a rich, glossy sauce.
In a small bowl, combine the listed sauce ingredients. Whisk thoroughly until smooth, then set aside.
Pour boiling water over the fresh lo mein noodles. Let them soak for 15 to 20 seconds, just until loosened.
Strain the noodles immediately through a colander. Set aside, and do not rinse them with cold water.
Heat the vegetable oil in a large pan over medium-high heat. Add the carrots, red bell pepper, snow peas, mushrooms, and napa cabbage. Pour in the water to flash-steam. Cook for 1 to 2 minutes until the liquid completely evaporates.
Reduce to medium heat. Add in the cooked noodles and prepared lo mein sauce.
Toss all ingredients quickly to coat everything evenly in the glossy sauce, then remove from the heat. Garnish with finely chopped green onions and sesame seeds.
