Ingredients
  

  • ½ cup vegan butter room temperature
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • ¾ cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ cup hot boiling water feel free to add more water 1 teaspoon at a time to get the right cookie dough consistency
  • 1 cup oats quick-cooking
  • ¾ cup chocolate chips semi-sweet vegan
  • 1 - 2 tablespoon hemp seeds
  • Required: Lined baking sheet

Instructions
 

  • Beat butter, sugar and vanilla until light and fluffy. Add flour and salt and mix until well combined.
  • Dissolve baking soda in boiling water and add to the mixture. Stir in rolled oats, chocolate chips and hemp seeds.
  • Taking about 1 tablespoon of cookie dough in your hand, roll it into a ball and add to lined baking sheet. Flatten the dough ball with hand into a cookie shape. Repeat this process. Bake at 350 degrees F for 12 minutes max (do not overcook).
